About Me

My name is Racine. My husband's name is Ivor. We've been vegetarians for 40 years. I've been vegan for the last 20.

Speciesism is an ideology that makes discrimination against the members of other species seem normal and natural. It is embedded in our culture and in our thinking. What we do comes from what we think. My program will give food for thought. We can choose to live compassionately.

The value of nonhuman animals does not depend on them being human, any more than the value of women is dependant on them being men, or the value of people of color is dependant on them being white people.

Currently, many of us will no longer accept racism, sexism, hetrosexism; a compassionate world will one day also recognize speciesism, and refuse to accept the devaluation of nonhuman animals.

The "Sexy Vegan" does not eat a member of their universal family. The "Sexy Vegan" is cool. Compassion is sexy. We are healthy and we live life fully--while allowing other living beings to LIVE.

The Audible Kitchen – 02/17/13 – “HEART MONTH”


Hummus


▪ 1 15 ounce can garbanzo beans


▪ 1/2 cup sesame tahini


▪ 2-3 tablespoons lemon juice


▪ 2 garlic cloves, peeled


▪ 1/2 teaspoon salt


▪ up to 2/3 cup water


Rinse the garbanzo beans. Place them in food processor


and grind. While grinding, add sesame tahini. Toss in


the garlic.


Add 2 tablespoons lemon juice. Stop the grinder and


taste the mixture. If it tastes ‘flat’ add a little more


lemon juice.


Add the salt (or add later to taste.) Start adding the


water a little at a time and continue processing until the


hummus reaches your desired consistency.


Customize your hummus! Add basil, sun-dried


tomatoes, artichokes, eggplant, scallions, kalamata


olives or ???


Chill and serve with pita chips, crackers, flat bread or


spread it on a wrap loaded with your favourite


vegetable mix.

The Audible Kitchen – 02/10/13 – Chinese New Year


Tofu & Vegetable Lo-Mein


▪ 8 ounces udon Chinese noodles (or linguine)


▪ 2 teaspoons toasted sesame oil


▪ 2 teaspoons & 1 tablespoon peanut oil


▪ 8 ounces extra-firm tofu, drained and cut into 1/2 inch


cubes


▪ 4 scallions, chopped


▪ 2 1/2 cups bok choy, shredded


▪ 1 small carrot, shredded


▪ 1 1/2 cups snow peas, strings removed


▪ 2 cloves garlic, minced


▪ 2 teaspoons fresh ginger, peeled and minced


▪ 3 tablespoons tamari


Cook the noodles as directed. Rinse with cold water.


Place in a bowl, mix in the sesame oil and set aside.


Place 2 teaspoons peanut oil in a skillet on medium-high


heat.


Drain the tofu and cut into 1/2 inch cubes. Stir-fry the


cubes for about 5 minutes, turning gently until they are


completely browned. Set aside.


Add 1 tablespoon peanut oil to skillet. Add the scallions


and bok choy.


Stir-fry for a few minutes until the bok choy is almost


soft.


Add the carrot, snow peas, garlic and ginger and stir-fry


for about a minute. Add 1 tablespoon of the tamari and


cook for another minute. Add the tofu, noodles and 2


tablespoons tamari.


Combine and cook for a few more minutes until it’s all


heated.


Now it’s ready to serve!

The Audible Kitchen – 2/3/13 –


Valentine’s Day: Karin’s Incredible Chocolate Pie (from


PETA)


▪ 25 vegan sandwich cookies


(I use Newman O’s, chocolate cookie/vanilla cream


flavour)


▪ 1/2 cup melted margarine


▪ 1 1/4 pounds soft tofu


▪ 1 cup semisweet chocolate chips


Break up the cookies and place in food processor. Grind


them into crumbs. Transfer to a mixing bowl and add


the melted margarine. Stir until all the crumbs are


moistened.


Press the cookie mixture into a pie pan and refrigerate


for a half hour.


Place the drained tofu in food processor (after you’ve


cleaned out all the crumbs!) Blend the tofu until it’s


smooth and creamy.


Melt the chocolate chips. I use a glass bowl and melt


them in the microwave stirring them every 10 seconds.


Be careful as it’s easy to burn chocolate. They can also


be melted in a double boiler. Add the melted chocolate


to the tofu and blend until mixed.


Pour the mixture into the pie crust and chill for at least 2


hours.

The Audible Kitchen


Vegan Stew


▪ 1 1/2 pounds of medium-firm tofu, cut into little cubes


▪ 1/2 cup tamari


▪ 5 medium potatoes, peeled & cut into chunks


▪ 6 carrots, peeled & thickly sliced


▪ 4 medium onions, chopped


▪ 1 cup unbleached flour


▪ 1 teaspoon salt


▪ 1/2 teaspoon black pepper


Place the tofu cubes in a flat dish and pour the tamari on top and set aside.


Bring 2 1/2 quarts of water to a boil in a big pot. Add the potatoes, carrots


and onions. Cook for about 20 minutes or until potatoes are soft.


Pre-heat the oven to 350°F and generously grease a cookie sheet with


safflower or other high-heat oil.
Place the flour, salt and pepper in a bag. Gently add the tofu pieces, a few


at a time to coat them with the mixture. Place them on the cookie sheet


and bake for about 20 minutes. Carefully turn them and bake for another


10 minutes.


Mix any leftover flour mixture into any leftover tamari and add it to the


vegetables.


Carefully add the baked tofu cubes to the vegetables, cover and simmer on


lowest heat for about 30 minutes.


Serves 6 – 8


If there happens to be any leftover, refrigerate and reheat. It’s almost


better the next day!

The Audible Kitchen – 1/20/13


Easy Red Beans & Rice


▪ 1 medium onion


▪ 1/2 green pepper


▪ 2 celery stalks


▪ 3 cloves garlic


▪ 3 15-ounce cans red beans (no sugar added)


▪ 1 15-ounce can fire-roasted tomatoes


▪ 1 teaspoon oregano


▪ 1 teaspoon smoked paprika


▪ 1 teaspoon thyme


▪ 1/2 teaspoon black pepper


▪ 1/4 to 1 teaspoon cayenne pepper (as desired)


▪ 2 teaspoons hot sauce (optional, let your diners add


their own!)


▪ Liquid Smoke seasoning


▪ cooked rice


Place a large pot on medium-low heat. Separately


mince the onion, green pepper, celery and garlic in your


food processor using ‘pulse’ then mix them in the pot


with 2 tablespoons of water and let them cook until soft.


Rinse and drain the beans. Place 1/2 of them in


processor along with 1/2 the fire-roasted tomatoes and


pulse until almost pureed.


Add the bean/tomato mixture and remaining beans and


tomatoes to the vegetables.


Stir in the oregano, thyme, black pepper and cayenne.


Turn heat to simmer. Cover and cook for 30 to 45


minutes checking to make sure there is still enough


moisture to keep it all simmering. If it seems dry, add


water tablespoon by tablespoon.


When it’s done add about 5 drops of smoke flavour and


stir.


Serve over your favourite rice!


6 servings.

The Audible Kitchen – 1/13/13


Meal in a Bowl Salad adapted from Louise Hagler’s ‘Tofu


Cookery’


▪ 1 quart fresh romaine (or other greens), torn


▪ 2 carrots, grated


▪ 1 celery stalk, minced


▪ 1 small green bell pepper, minced


▪ 2 green onions, sliced


▪ 1 pound firm tofu (cut in half)


Cut 1/2 of the tofu in small cubes (about 1/4 inch) and


brown in a non-stick sauté pan over medium heat.


Dressing:


▪ 3 gloves garlic, crushed


▪ 1/2 cup oil (safflower or sunflower or any light oil)


▪ 1/2 cup vinegar (I love balsamic!)


▪ 1/2 cup water


▪ 1/8 teaspoon of each: salt, pepper, basil, celery seed


Place all the dressing ingredients in a covered jar and


shake.


Smokey Tofu Crumbles:


▪ The other 1/2 of the tofu, mashed


▪ 1/4 cup tamari


▪ 1 clove garlic, crushed


▪ 1/2 teaspoon ginger


▪ 1/4 teaspoon black pepper


▪ 2 tablespoons oil


Blend, by mashing with a fork, all the Smokey Tofu


Crumbles ingredients together. Cook over low-to-


medium heat in a non-stick sauté pan until all the


moisture is gone and you are left with crunchy bits. Stir


often to prevent burning.


Place the veggies and tofu cubes in a salad bowl and


toss. Add (to taste)


a few tablespoons of the dressing. Add Smokey Tofu


Crumbles, toss


and serve.

Classic Swiss Fondue


▪ 2 cups white wine (gewürztraminer or Riesling)


▪ 1 cup water


▪ 1/2 cup nutritional yeast flakes


▪ 1/3 cup quick-cooking rolled oats


▪ 1/4 cup tahini


▪ 4 tablespoons arrowroot or cornstarch


▪ 2 tablespoons lemon juice


▪ 2 tablespoons onion granules


▪ 1 teaspoon salt


▪ 1/2 teaspoon mustard powder


▪ 1/8 teaspoon white pepper


▪ 1/4 teaspoon ground nutmeg


▪ 1 loaf of crusty bread, cubed


Combine all ingredients in a blender or food processor


and blend until smooth. Transfer to a saucepan and


bring to a boil, stirring constantly. Reduce heat to low


and cook for a few more minutes, while continuing to


stir. Transfer to a fondue pot and keep warm over a


very low flame.


Note: in addition to dipping the traditional crusty bread

The “Audible Kitchen” – 12/30/12 New Year’s


Kourabiedes (Almond Shortbread Crescents)


▪ 1 1/2 cups unbleached flour


▪ 1 1/2 cups ground almonds


▪ 1 teaspoon baking powder


▪ 1/2 teaspoon salt


▪ 8 ounces unsalted vegan margarine


▪ 2/3 cup confectioners’ (icing) sugar (plus a little more


for dusting)


▪ 1 tablespoon plain soymilk


▪ 1 teaspoon vanilla extract


▪ 1/2 teaspoon almond extract


Preheat oven to 350°F.


In a large mixing bowl, combine flour, 1/2 cup almonds,


baking powder and salt.


Using a mixer (could also be blended by hand) blend


softened margarine with sugar until creamy. Continue


blending adding soymilk, vanilla and almond extracts.


Gradually add flour mixture and blend until smooth.


Stir in remaining (1 cup) almonds.


Shape a piece of the dough into a 1 inch ball. Roll, by


hand, into a 2- 2 1/2 inch log and bend into a crescent.


Set on cookie sheet.


Repeat with remaining dough. Place crescents about 1


inch apart on cookie sheets.


Bake for 12-15 minutes or until the tops are just


starting to brown.


Carefully transfer to cooling racks and dust with


confectioners’ sugar.


Cool…then enjoy.


Makes approximately 36 crescents

The “Audible Kitchen” – 12/23/12


Warm Mushroom Salad


▪ 2 large red peppers, cut into large pieces


▪ 32 button mushrooms, stems removed


▪ juice of 1 orange


▪ a little grated orange peel rind


▪ 1 tablespoon maple syrup


▪ 1 heaping teaspoon tarragon


▪ salt and pepper to taste


▪ crisp, green romaine leaves


▪ sesame seeds


▪ 1 to 2 tablespoons margarine




Place peppers under hot grill or broiler until charred all


around.


Peel, remove seeds and dice. Sauté mushrooms in


margarine for about 3 minutes.


Place the orange juice, rind, maple syrup, tarragon, salt


and pepper in a jar with a tight fitting lid. Shake well.


Prepare in advance to allow tarragon to release flavour.


Arrange torn romaine leaves on individual dishes. Spoon


reheated mushrooms into the center. Arrange reheated


peppers around the mushrooms. Spoon the dressing


over the salad. Dust with sesame seeds.

THE AUDIBLE KITCHEN - 12/16/12


Puff Pastry Roll (with stuffing*)


▪ 6 cups soft bread cut into small cubes or torn into


small pieces


▪ 1/4 teaspoon salt


▪ 1/8 teaspoon pepper


▪ 1/2 teaspoon sage


▪ 1/4 teaspoon thyme


▪ 1 teaspoon poultry seasoning (vegan, of course!)


▪ 2 tablespoons fresh parsley, minced


▪ 1/8 cup shortening


▪ 1/4 cup onion, minced


▪ 2 tablespoons margarine


▪ 1/2 cup water


▪ 1 package puff pastry (thaw per directions)


Combine the first seven ingredients thoroughly.


Melt shortening over medium heat. Add the onion and


sauté for 2 minutes. Gradually add in the dry mixture


and sauté stirring constantly. Heat the water and melt


the margarine in it.


Gradually pour the margarine-water over the mixture


while stirring. You may not need all the water, just use


enough to moisten the mixture. Keep cooking over low-


medium heat until mixture becomes slightly browned.


Remove from burner.


Preheat oven to 350°F.


Roll out 1 sheet of pastry on a floured board. Place


stuffing mixture down the center of the pastry almost


from end-to-end, about 2-3 inches around. Create the


roll by folding the sides of the pastry around the


stuffing, tucking the ends underneath. Turn the roll,


seam side down on a cookie sheet. Cut 1” vents every


3/4 inch, vertically, down the length of the roll. Lightly


brush with oil.


Bake for at least 40 minutes until the roll is a beautiful


golden brown.


Slice and serve warm with cranberry sauce.


*Try other fillings like potato, sweet potato or falafel


and serve with appropriate condiments (vegan sour


cream, salsa, tahini.)

The Audible Kitchen – 12/2/12 CHANUKAH


Latkes (Potato Pancakes)




▪ 2 1/2 cups potatoes, peeled and cubed


▪ 1/2 medium onion, peeled and chopped into a few


pieces


▪ 3 tablespoons medium-firm tofu


▪ 1/4 cup matzo meal


▪ 1/2 teaspoon salt


▪ Peanut Oil


Blend all ingredients in a blender or food processor. DO


NOT OVERBLEND. Mixture should have an ‘oatmeal’


consistency.


Let the mixture stand for a few minutes to thicken.


Heat skillet to medium heat (I like to use cast iron pans


for latkes.)


Add about 1/4 inch of oil. Drop the latke mixture, using a


large spoon or ladle, into the heated oil. Fry for 8


minutes. Turn and fry for another 6 minutes.


Note: if there is no oil left in the pan when turning, add


a little more.


The latkes are done when they’re golden brown and


the potato is completely cooked. Skillet temperature or


frying times may need to be adjusted to get them just


right!


Place the finished latkes on paper towels to absorb


excess oil.


Serve immediately or refrigerate and reheat later. To


reheat


place latkes, covered with tinfoil, in preheated 350°F


oven for about 20 minutes.


Serve with applesauce or tofu sour cream.


Important: if the oil starts smoking…the heat is too


high! Also, be careful not to get splattered with hot oil


when adding the latke mixture to the oil or when


turning the latkes.

Cranberry Soup


▪ 1/2 cup chopped onions


▪ 2 cups shredded carrots


▪ 1 cup chopped celery


▪ 3 cups fresh cranberries


▪ 4 cups vegetable broth


▪ 1/2 cup applesauce


▪ 1/4 cup frozen orange juice concentrate


▪ 4 tablespoons brown sugar


▪ 1/4 teaspoon cinnamon


▪ 1/4 teaspoon cloves




Combine onion, carrot, celery and cranberries in a large


pot with 1 cup water. Simmer, uncovered for about 30


minutes or until all the water is gone.


Add the remaining ingredients starting with the


vegetable broth.


Using a blender or food processor, blend until smooth.


The more blended, the more the flavours will mingle.


Reheat. Garish with finely chopped chives and serve or


refrigerate to use later.

The Audible Kitchen – 11/18/12 – American Thanksgiving




Vegan Pumpkin Pie


▪ 1 1/4 pounds soft tofu


▪ 1 16 ounce can pumpkin puree


▪ 3/4 cup maple syrup


▪ 3/4 cup sugar


▪ 1/3 cup unbleached flour


▪ 1 tablespoon cinnamon


▪ 1 teaspoon ginger


▪ 1 teaspoon nutmeg


▪ 9-inch unbaked pie shell*


Preheat oven to 400° F


Place the tofu and pumpkin puree in a food processor


and blend until creamy. Blend in the remaining


ingredients. Pour the mixture into the pie shell. Bake


for 30 minutes. Turn the oven temperature down to


350°F and bake for another 45 minutes.


Remove from oven and cool. Refrigerate, covered, for


12-24 hours until set. If the pie has condensation on


top gently blot with a paper towel or absorbent cloth.


If desired, serve with soy or rice whip cream!




*(from September 30th Quiche recipe)

▪ ½ cup vegan margarine


▪ 1 teaspoon salt


▪ ½ cup water


Blend flour and margarine till completely mixed. Add salt.


Add water little by little until the mixture is no longer dry,


but not sticky. Roll the dough on a floured surface.


Press into pan.

The Audible Kitchen – 11/11/12




Vegan Banana Bread



▪ 3/4 cup tofu


▪ 1 large ripe banana, peeled


▪ 1/4 cup safflower oil


▪ 2/3 cup sugar


▪ 1 teaspoon vanilla


▪ 2 cups unbleached flour


▪ 1/2 teaspoon baking powder


▪ 1/2 teaspoon baking soda


▪ 1/4 teaspoon salt


▪ Optional: add 3/4 cup: chopped walnuts or chocolate


chips or blueberries


Preheat oven to 350° F


Lightly grease a loaf pan. If you use glass it will take a l


little longer than metal or silicone.


Cream the tofu in a food processor. Add the banana and


blend until smooth. Add the oil and vanilla. If your food


processor is powerful enough (the mixture will be pretty


thick!)
add the flour, baking powder, baking soda and salt. If


you don’t have a food processor or don’t want to burn


yours out(!) , you can mash the banana and tofu, add


the dry ingredients together and then mix it all together.


Pour the mixture into the loaf pan and bake for about


an hour.


Check after 40 minutes. When the top has cracked


slightly and toothpick comes out ‘almost’ clean it’s


ready!


Allow to cool on a cooling rack for about 20 minutes.


Remove from pan and slice. This recipe freezes very well.

The “Audible Kitchen” – 11/04/12 – (end of daylight


saving time theme)




Pasta Veloce (Quick Pasta!)




▪ 1 28-ounce can crushed or chopped tomatoes


▪ 3 cloves garlic, peeled


▪ 1 pound mezze penne or any small pasta


▪ 1/3 cup olive oil (plus extra for drizzling)


▪ 2 (heaping) tablespoons dried oregano


▪ 2 (heaping) teaspoons fresh, chopped basil


▪ 1 teaspoon salt


▪ 1/2 teaspoon freshly ground black pepper


▪ 4 to 5 beefsteak tomatoes, cut in 1/2 inch slices




Preheat oven to 450°F.


Lightly grease a medium sized casserole or deep glass


baking dish


Using a food processor, blend the canned tomatoes and


garlic.


Pour into a medium sized bowl. Add the pasta


(uncooked!)


Add the olive oil, oregano, basil, salt and pepper. Toss


until it’s all coated.


Line the bottom and sides of the casserole dish with the


tomato slices. Pour the pasta mixture into the pan and


put the remaining tomato slices on top. Drizzle the top


with olive oil.


Bake for about an hour. The tomatoes on top should be


a little crispy and the pasta should be cooked. Let it cool




for about 4 Servings

Pumpkin Oatmeal Cookies:


▪ 2 cups unbleached flour


▪ 1 1/3 cups rolled oats


▪ 1 teaspoon baking soda


▪ 3/4 teaspoon salt


▪ 1 (heaping) teaspoon cinnamon


▪ 1/2 (heaping) teaspoon nutmeg


▪ 1 2/3 cups sugar (I use organic evaporated cane juice)


▪ 2/3 cup safflower oil


▪ 2 tablespoons molasses


▪ 1 cup canned pumpkin (or pureed cooked pumpkin)


▪ 1 teaspoon vanilla extract


▪ 1 cup finely chopped walnuts




Preheat oven to 350°F

.
Lightly grease 2 cookie sheets (or 4 if you have them!


My oven only fits 2 sheets at a time so I do 2 sheets


twice.)


In a large mixing bowl blend together the flour, rolled


oats, baking soda, salt, nutmeg and cinnamon.


In another bowl, blend together the sugar, oil,


molasses, vanilla and pumpkin. Beat till well mixed.


Gradually add the dry ingredients to the wet ingredients.


Add the walnuts.


Drop the batter onto the cookie sheets using a


tablespoon.


They can be about an inch apart. Press the center of


the drops with a fork to give them their cookie-shape.


Bake for 8 minutes then rotate the sheets front to back


and/or switch levels in the oven and bake for another 8


minutes.


Remove from oven and allow sheets to cool for a couple


of minutes.


Transfer the cookies to a cooling rack. Give them time to


cool and set before you start munching!


Makes about 4-5 dozen cookies…and they refrigerate


well!

The “Audible Kitchen” – 10/21/12


Vegan Creamy Mushroom Soup for Two


▪ 4 ounces dark, over-ripe mushroom caps, cleaned and


diced


▪ 1 tablespoon safflower oil


▪ 2 gloves garlic, peeled


▪ 1 medium russet potato, peeled, cleaned and diced


▪ 1 1/2 cups water


▪ 1 tablespoon tamari


▪ salt and pepper to taste


Place oil in a large skillet that has a tight fitting cover.


Add mushrooms and turn burner to medium-high heat.


As soon as mushroom juices are released add garlic


cloves and tamari.


Cook for about 1 minute longer. Add water and


potatoes.


Bring to a boil. Reduce heat to simmer. Cover and cook


for 30 minutes.


After 30 minutes check to make sure potatoes are


cooked.


Remove from heat. Liquify using a blender or food


processor.


Reheat, if necessary, and serve.
